Sausage, Apples, and Sauerkraut

- 2 T butter
- 1 med. onion, chopped
- ¼ c chopped green pepper
- 1 large apple, peeled, cored, and grated
- 2 T brown sugar
- 12 small red potatoes
- 1½ c sauerkraut, drained
- 1 lb smoked beef or kielbasa
- Melt butter and add onion and pepper. Cook until tender.
- Add apple, brown sugar, potatoes, and sauerkraut. Mix well.
- Place sausage on top of mixture.
- Cover and cook over medium-low heat for 30 minutes.
