Fresh Blueberry Cobbler

Ingredients
- ½ c sugar
- 1 T cornstarch
- 4 c blueberries
- 1 t lemon juice

- Topping:
- 3 T shortening
- 1 c flour
- 1 T sugar
- 1½ t baking powder
- ½ t salt
- ½ c milk
Instructions
- Heat oven to 400 degrees.
- Mix ½ c sugar and cornstarch in a 2 qt. saucepan.
- Stir in blueberries and lemon juice.
- Cook, stirring constantly until mixture thickens and boils. Boil and stir 1 minute.
- Pour into ungreased 2-qt. casserole. Keep hot in oven.
- Cut shortening into flour, 1 T sugar, baking powder, and salt until mixture resembles fine crumbs.
- Stir in milk.
- Drop topping by 6 spoonfuls onto hot blueberry mixture.
- Bake until topping is golden brown, about 25-30 minutes.
- Serve warm.
