Apple Strudel Muffins

Ingredients
- 2 c flour
- 1 t baking powder
- ½ t baking soda
- ½ t salt
- ½ c butter
- 1 c sugar
- 2 eggs
- 1¼ t vanilla
- 1½ c chopped apples

- Topping:
- ⅓ c packed brown sugar
- 1 T flour
- ¼ t cinnamon
- 1 T butter
Instructions
- Preheat oven to 375 degrees. Grease a 12 cup muffin pan.
- In medium bowl, mix flour, baking powder, baking soda, and salt.
- In large bowl, beat together butter, sugar, and eggs until smooth. Mix in vanilla. Stir in apples and then gradually add flour mixture. Spoon into muffin pan. (Recipe makes 12 muffins)
- In small bowl, mix brown sugar, flour, and cinnamon. Cut in butter until mixture is crumbly. Sprinkle on top of muffins.
- Bake 20 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes in pan, and then remove from pan and cool on wire rack.
